choc-chip chickpea cookies

Full of fibre and protein, these choc chip chickpea cookies are a great snack to reach for when you're feeling like you could eat the entire contents of your cupboard 🙈

ingredients
* 1 400g tin chickpeas
* 1/4 cup peanut butter
* 2 tsp vanilla extract
* 2 tbsp coconut oil
* 1 tsp baking powder
* 1/4 cup brown rice syrup
* Dark chocolate (I used Lindt 70% dark chocolate squares and chopped them up)

method
1. Drain, wash, and rinse chickpeas. Pat dry with paper towel.
2. Place all ingredients except the chocolate in a blender and blend until everything is combined and the mixture has a doughy consistency.
3. Fold through chocolate pieces.
4. Scoop out 1 tbsp of dough and place on a baking paper lined tray.
5. Place in the oven at 180° for 10-12 minutes or until golden brown.
6. Enjoy!
