banana muffins
These muffins are the perfect afternoon snack for when you get those 3pm munchies! This recipe also tastes amazing with added chocolate and blueberries.

ingredients
* 1/3 cup coconut oil (melted)
* 1/2 cup maple syrup
* 2 eggs
* 2 large bananas (mashed)
* 1/4 cup milk
* 1 tsp vanilla essence
* 1/2 tsp salt
* 1/2 tsp cinnamon (plus extra to sprinkle)
* 1 tsp baking soda
* 1 1/2 cups plain flour
method
1. Preheat oven to 170 degrees Celsius.
2. Mix coconut oil and maple syrup together.
3. Add in eggs, mashed banana, and milk and whisk until combined.
4. Add vanilla, salt, cinnamon, and baking soda.
5. Add flour and use a wooden spoon to gently combine.
6. Line a muffin tray with paper liners. Fill halfway with mixture.
7. Bake for 20-25 minutes until golden and a skewer comes out clean (this could vary depending on your oven).
8. Cool for 15 minutes and enjoy!
