zucchini and corn fritters

These are a super easy, quick, delicious, and versatile meal option! Make a huge batch and freeze them so that they're available for times when you don't feel like cooking. This is a basic recipe so feel free to change it up! Grated carrot and sweet potato are amazing additions/substitutions.

ingredients
* 150g grated zucchini
* 300g corn kernels, tinned
* 2 eggs
* 1/3 cup milk
* 1 cup SR flour, sifted
* 1/2 tsp cumin
* 1/2 tsp turmeric
* salt & pepper to taste

method
1. Whisk zucchini, corn, eggs, and milk together.
2. Stir in flour, spices, and flavours (curry powder would also taste good).
3. Heat oil in a frying pan. Place heaped tablespoons of mixture in a pan. Flip them after a few minutes and bubbles start to appear. They should be lightly golden.
4. Enjoy!
