strawberry matcha gummies

After becoming obsessed with the strawberry matcha latte, I decided to create some gummies that also have the potential to support my gut health with the benefits from the added collagen and gelatin.

ingredients
* 1.5 cups strawberries
* 1 tbsp matcha powder
* 1 tbsp collagen powder
* 1/4 cup gelatin & additional 1 tbsp

method
1. Puree strawberries by blending them with a small dash of water.
2. Dissolve matcha powder and collagen powder in 250ml of hot water.
3. In separate bowls, ‘bloom’ the gelatin. Mix 1/4 cup of gelatin with 1/2 cup of water and stir until texture is even. Mix 1 tbsp of collagen with 2 tbsps of water until texture is even.
4. Add the 1/4 cup of bloomed gelatin to the matcha and stir until gelatin is dissolved. Pour into gummy moulds until 3/4 full.
5. Dissolve the 1 tbsp of bloomed gelatin in 1-2 tbsps of hot water. Mix into the pureed strawberries.
6. Add the strawberry mixture on top of the matcha in the moulds.
7. Refrigerate for 2 hours.
8. Enjoy! (& try not to eat them all in one go).
